Preheat oven to 350°. Spray a 9-inch square cast-iron skillet with baking spray with flour.

Beat butter and brown sugar in a large bowl with a mixer at medium speed until fluffy, 3 to 4 minutes, stopping to scrape sides of bowl. Beat in egg and vanilla.

Stir together oats, flour, salt, baking soda, allspice, nutmeg, and cloves in a medium bowl. With mixer on low speed, gradually add oats mixture to butter mixture, beating until combined.

Beat in milk. Stir in apricots and ginger. Press dough into prepared skillet.

Bake until golden brown and a wooden pick inserted in center comes out clean, 25 to 30 minutes. Let cool completely on a wire rack.

Stir together confectioners’ sugar and yogurt in a small bowl until smooth. Drizzle glaze over baked cookie. Top with crystallized ginger, if desired. Refrigerate in an airtight container for up to 3 days.
