Italian Sausage Patty Melts

What could make a patty melt better than it already is, you ask? Why, swapping out the usual ground beef burger for an Italian sausage patty, of course. Choose your favorite — hot or sweet Italian sausage for this sandwich. But don’t stop there! Make the burger big and cook plenty of onions. Nothing is better than a well-topped sandwich.

Melt 2 Tbsp. butter in a skillet over medium heat. Add onions and cook, covered, until softened, ⏰ 10 minutes. Uncover skillet and continue cooking onions until they begin to brown, stirring occasionally, ⏰ 10 minutes more.

Shape sausage into four ½-inch-thick patties. Melt 2 Tbsp. butter in a skillet over medium-high heat. Sauté patties until a thermometer inserted into the centers registers 160°, ⏰ 810 minutes total.

Top each of 4 bread slices with 2 slices cheese, a sausage patty, and one-quarter of the onions. Top with remaining 4 bread slices.

Melt 2 Tbsp. butter on a griddle or in a cast-iron skillet over medium heat. Cook sandwiches, on one side, until bread is toasted; remove sandwiches. Melt remaining 2 Tbsp. butter on griddle, then return sandwiches, toasted side up. Cook patty melts until bread is crisp and cheese is melted, about ⏰ 10 minutes total.
