Preheat oven to 375°.
Melt butter in an 8-inch cast-iron skillet over medium heat. Add onions and thyme; cook until onions start to caramelize. Stir in apples; cook about 20 minutes.
Deglaze skillet with brandy; cook until nearly evaporated. Stir in Boursin until melted, then season with salt and pepper.
Combine Gruyère and Parmesan; sprinkle over dip. Bake dip until cheeses melt and are brown and bubbly, about 20 minutes. Let dip stand 5 minutes before serving.
