Preheat oven to 400°. Line a baking sheet with parchment paper.
Roll puff pastry into a 16×10-inch rectangle, then cut into thirds lengthwise. Score a ¼-inch border on each piece of pastry with the tip of a knife.
Spread a thin layer of mustard inside border of pastries. Divide ham among pastries, then sprinkle cheese on top of ham.
Arrange 4 asparagus spears in a single layer over each pastry. Brush border of pastries with egg wash. Bake tarts until cheese melts and pastries are golden brown, 15–20minutes.
