Make-Ahead Tip
Make the cakes ahead and let them chill, then cook them just before serving.
Instructions
Cook bacon in a sauté pan until
crisp; transfer to a paper-towel-lined
plate and reserve drippings
in pan.
Combine bacon, clams, parsley,
garlic, zest, lemon juice, and
Old Bay in a bowl. Stir in eggs
and panko until combined.
Form clam mixture into six cakes
using a ¼ cup measure; arrange
on a baking sheet and chill at least
15 minutes. Line another baking
sheet with paper towels.
Heat drippings in sauté pan over
medium heat. Add clam cakes and
cook until golden brown, about
3 minutes per side; transfer to
prepared baking sheet.
