How To Make Sweeter Onion Rings
Soaking the onions in ice water dilutes the sulfur content, turning them sweet and mild. And triple dipping makes for a crispy crust.
Instructions
Soak onion rings in ice water for 1 hour; drain.
Place coconut milk in a shallow dish. Combine flour, salt, baking powder, black pepper, and cayenne in another shallow dish. Place shredded coconut in a third shallow dish.
Dip onion, a few rings at a time, in coconut milk, then dredge in flour mixture, dip back in coconut milk, dredge back in flour mixture, and dip back in coconut milk a third time, then into shredded coconut.
Set onion rings on a rack set inside a baking sheet; chill while heating oil, about 15 minutes.
Heat 1 inch oil in a pot to 365° over medium-high. Fry onion rings in batches until light brown, 2–3 minutes per batch. Transfer onion rings to a paper-towel-lined plate; season with salt.
Serve onion rings with your favorite dipping sauce.
