Grilled Zucchini Roll-Ups with Feta & Fresh Herbs
Delight party guests with these clever little roll-ups while sticking to a Mediterranean theme.
A plate of raw veggies with dip is standard at gatherings. But it’s time to change things up for an option guests crave! Grill thin slices of zucchini, spread an herbed cream cheese and feta filling over each slice, then tightly roll ‘em up. Don’t worry if a little filling squeezes out — consider it part of the garnish.
For a different take on the same concept, you could also use yellow squash. Or vary the filling with more herbs, minced olives, or crushed pistachios.

Zucchini vary in size, so you may need to trim the slices to yield correct proportions.
Instructions
Preheat grill to medium-high. Brush grill grate with oil.
Combine feta, cream cheese, mayonnaise, 1 Tbsp. thyme, oregano, lemon juice, and 1 Tbsp. olive oil for the filling; season with salt and pepper.
Coat zucchini with remaining 2 Tbsp. olive oil; sprinkle with salt. Grill zucchini, uncovered, until tender, about 2 minutes per side. Let zucchini cool.
Pat zucchini dry and spread a scant tablespoon of filling evenly on each. Tightly roll zucchini slices; garnish with zest and thyme.
