Homemade Animal Cookies
Line up for these (almost) too-adorable-to-eat homemade treats. No need to frost these animal cookies — with three different flavors, they’re roaring good.

Animal Cookie Cutters
The cookie cutters we used are small in size. Depending on the cutters you use, you may end up with fewer cookies and may need to bake them a little longer.
Instructions
Whisk together flour and salt.
Cream butter and sugar in a bowl with a hand mixer on medium speed until light and fluffy, 5 minutes. Add egg and 2 tsp. vanilla; beat until combined.
Add flour mixture; beat just until combined.
Divide dough into 3 equal portions. Stir remaining 1 tsp. vanilla into one dough portion until combined.
Press vanilla dough into a disc and wrap in plastic; chill until firm, at least 1 hour.
Stir preserves and desired amount of food color into second dough portion until combined. Press strawberry dough into a disc and wrap in plastic; chill until firm, at least 1 hour.
Stir cocoa into remaining dough portion until combined. Press chocolate dough into a disc and wrap in plastic; chill until firm, at least 1 hour.
Preheat oven to 350°. Line baking sheets with parchment.
Roll out each portion of dough on a floured surface to 1/4-inch thick. Cut out cookies with animal cookie cutters (dipping cutters in flour each time) and transfer to prepared baking sheets, spaced 1-inch apart. Chill cookies 10 minutes before baking.
Bake cookies until edges are set and lightly browned, 8–10 minutes. Let cookies cool on baking sheets 2 minutes, then transfer to a rack to cool completely.
