Kale, the leafy green of the cabbage family, is available year-round, but is at its peak from mid-winter through early spring. Kale’s list of health benefits is long, most notably for being an excellent source of antioxidant vitamins.
Instructions
Preheat oven to 300°. Line two baking sheets with parchment paper.
Cut kale leaves from center ribs; discard any thick stems.
Toss kale with oil, Parmesan, pepper, and salt; arrange in a single layer on prepared baking sheets.
Bake kale until some leaves are crisp (remaining leaves should crisp as they cool) and Parmesan is browned 25–30minutes. Let chips cool until crisp, at least 5 minutes.
