Salmon Tartare on Potato Crisps
Everyone is always looking for an impressive new appetizer, and this tartare is just the ticket. With potato crisps as the raft, the combination of crunchy and soft textures is sure to be a hit. But if you’re uneasy about raw salmon, don’t be. Freeze the salmon prior to dicing it up to kill any potential parasites, or buy prefrozen.

The best and quickest way to get paper-thin, even slices of potato is to use a mandoline.
Instructions
Preheat oven to 400°. Coat a baking sheet with nonstick spray.
Heat garlic in oil in a saucepan over medium until fragrant, 2–3 minutes; cool slightly, then brush on one side of each potato slice. Arrange potato slices, oiled side up, on prepared baking sheet and bake until browned and crisp, 20–25 minutes; cool completely.
Combine tarragon, scallions, 1 tsp. zest, and lemon juice; toss with salmon, then season with salt and pepper.
Arrange avocado slices on crisps, then top with 1 Tbsp. tartare. Pipe or spoon ½ tsp. chive and onion dip onto each crisp and garnish with additional zest and scallions.
