Spicy Shrimp Satay with Lime-Marinated Cucumbers

Satay is a popular Indonesian street food because of its portability, versatility, and simple quick-cooking construction. And when it comes to summer food, always turn to the people who really know hot weather. This satay consists of shrimp tossed in a zesty cilantro-lime marinade, then threaded on skewers. Grill them on an outdoor grill, or bring the party inside and use a grill pan to cook the shrimp. Serve with lime-marinated cucumbers for a fresh and healthy snack.

For the satay, blend cilantro, shallots, ginger, lemon zest, lime zest, lime juice, coriander, cumin, black pepper, garlic, and serranos in a food processor until minced; scrape sides of bowl and season with salt. With machine running, drizzle in 3 Tbsp. oil. Transfer paste to a bowl, add shrimp, and marinate in the refrigerator 1 hour.
For the cucumbers, toss together cucumbers, 3 Tbsp. lime juice, and 1 Tbsp. sugar; season with salt. Let cucumber sit in mixture 1 hour.
Preheat grill to high. Brush grill grate with oil.
Thread 3 marinated shrimp onto each soaked skewer, alternating the direction of the tails. Grill satay, covered, until shrimp are cooked through and lightly charred, 2–3 minutes per side.
Serve satay with cucumbers and Pineapple-Pepper Relish.
