Since the chickpeas roast for a while, get them in the oven before preparing the salad and grilling the kebabs.
Instructions
Preheat oven to 400°.
Dry chickpeas with paper towels to absorb moisture. Remove and discard skins from the chickpeas.
Toss chickpeas with oil and sumac; season with salt and pepper. Transfer chickpeas to a baking sheet and bake until crispy, 40 minutes.
In order for seasonings to adhere to the chickpeas, remove the skins by rubbing with your fingers.
