Instructions
Preheat oven to 450°
Brush baguette slices on one side
with 2 Tbsp. oil; arrange in a single
layer on a baking sheet, then toast
until golden, about 5 minutes.
Sauté corn and shallots in
remaining 2 tsp. oil in a skillet over
medium-high heat until shallots
soften, 3–4minutes; transfer to a
bowl. Add strawberries, tomatoes,
and 1 Tbsp. parsley to corn mixture;
stir in vinegar and season with
salt and black pepper.
Beat cream cheese, garlic, and
pepper flakes with a mixer until
smooth; season with salt and
black pepper.
Spread cheese mixture on baguette
slices; top with corn mixture and
remaining 1 Tbsp. parsley.
