Instructions
Thinly slice tofu, then cut each slice into two triangles. Place a rack on a baking sheet, top with a kitchen towel, and transfer tofu to towel. Top tofu with another towel and second baking sheet, then weight with cans to press the tofu 30 minutes.
Preheat oven to 450°. Remove cans, baking sheet, towels, and tofu. Spray rack with nonstick spray and return tofu. Roast tofu until dry and crisp, about 25 minutes.
Preheat broiler to high.
Spread 1 tsp. pesto onto each tofu triangle. Sprinkle on mozzarella. Broil tofu until mozzarella melts. Garnish bites with basil.
