Tyropita Greek Cheese Pies
Tyropita are Greek phyllo hand-pies filled with a mixture of soft cheese and egg, with pine nuts for a little something special. This traditional food is easy to assemble once you get the hang of it, and makes a great appetizer — or even breakfast.

You’ll have more ghee than needed for this recipe. That’s a good thing. You don’t want to run out while you’re assembling!
Instructions
Preheat oven to 350°. Line a baking sheet with parchment.
Combine feta, ricotta, Parmesan, and pine nuts; season with salt. Stir in eggs until combined.
Warm ghee in microwave just until liquefied (but not hot). Unroll phyllo sheets; cover with plastic wrap and a damp towel.
Place one phyllo sheet on a cutting board; brush with ghee. Top sheet with 2 more sheets, brushing each with ghee.
Cut phyllo stack into thirds, lengthwise (about 3×14). Place 1 Tbsp. feta mixture about one inch from end of each phyllo strip; fold one corner of strip diagonally, over filling, to the opposite edge to form a triangle. Continue folding strips, like a flag, until all strips folded; transfer to prepared baking sheet. Cover pies with plastic wrap while repeating procedure with remaining sheets, ghee, and remaining filling.
Brush tops of pies with ghee.
