Alsatian Breakfast Sausage Casserole
Rise and shine! Sausage, Gruyère, apple, and rye come together for one heck of a sweet & savory breakfast egg casserole. Gruyère is a Swiss cheese with complex flavors that are creamy, fruity, and nutty. It pairs well with the sweet, yet tart, flavor of Honeycrisp apples.

Instructions
Preheat oven to 375°. Coat a 7×11-inch baking dish with nonstick spray.
Brown sausage in a sauté pan over medium-high heat until almost fully cooked, 5 minutes.
Add onion and sauté until softened, 3 minutes. Transfer sausage mixture to a paper-towel-lined plate.
Whisk together eggs, milk, mustard, sage, and salt; season with pepper.
Arrange bread in bottom of prepared baking dish; top with apple, 1½ cups cheese, and sausage mixture. Pour egg mixture over sausage, taking care it doesn’t spill over, then top casserole with remaining ½ cup cheese.
Bake casserole until cheese is browned, eggs are set, and a thermometer inserted into the center registers 160°, about 45 minutes.
