Banana Bread Pudding

Preheat oven to 350°. Spray a 9x13-inch baking dish with cooking spray.

Toss together bread cubes and 4 cups half-and-half, in a large bowl. Let stand at room temperature for 30 minutes.

Melt butter over medium heat, in a large saucepan. Whisk in brown sugar, ½ cup granulated sugar, cinnamon, ½ teaspoon cardamom, and ½ teaspoon salt until combined. Remove from heat; whisk in eggs until combined. Pour over bread mixture. Add bananas and pecans, gently folding to combine. Spoon mixture into prepared dish. Sprinkle with remaining 1 tablespoon granulated sugar, and cover with foil.

Bake for 50 minutes. Uncover and bake until golden brown and a wooden pick inserted in center comes out clean, about 10 to 15 minutes more. Let cool for 10 minutes.

Whisk together confectioners’ sugar, remaining ½ cup half-and-half, remaining ¼ teaspoon cardamom, and remaining 1 teaspoon salt in a small bowl. Drizzle over bread pudding before serving.
