Preheat oven to 350°. Thoroughly coat the inside of a 13-cup cast-iron fluted cake (Bundt) pan with butter and coat with flour.
Combine sugar, cocoa powder, and cinnamon. Cut each biscuit in half and place 1–2 chocolate squares in center of each biscuit; fold up edges to encase chocolate. Press edges together to seal. Toss biscuits in sugar mixture to coat. Layer biscuits in prepared pan.
Melt butter over low heat; add brown sugar and stir until melted. Pour syrup over biscuit pieces.
Bake monkey bread until golden brown, 45–55minutes; cover with foil if browning too quickly. Let bread rest in pan 5 minutes, then invert onto a plate and serve.
