Honey and Spice Granola

Preheat oven to 275°.

Bring butter, sugars, honey, and vanilla to a simmer in a 12-inch cast-iron skillet over medium heat. Cook, stirring frequently, until butter is melted. Remove from heat. Add oats, pecans, almonds, apricots, pumpkin seeds, salt, cinnamon, nutmeg, and red pepper, stirring until combined.

Bake until golden brown, about 55 minutes, stirring occasionally. (Mixture will continue to dry as it cools.) Stir in cranberries. Let cool in pan on a wire rack, stirring occasionally to prevent granola from sticking to pan. Serve with yogurt, if desired.
