Five-Minute Morning Prep

Cut onion and jamón and shred cheese; refrigerate.

Instructions

Preheat oven to 400°.

Heat 1 tablespoon olive oil over medium heat in a 10-inch ovenproof saucepan. Add onion; cook for 5 minutes. Add jamón; cook for 3 minutes.

Stir together eggs, arugula, Manchego, ½ teaspoon kosher salt, and ¼ teaspoon ground black pepper in a large bowl. Pour into pan, stirring gently.

Bake for 10 minutes.

Stir together arugula, oil, kosher salt, and ground black pepper to taste in a small bowl; garnish with arugula mixture, if desired.
