Spray a 9x13-inch baking dish with cooking spray.

Cook sausage over medium-high heat, in a large skillet. Using the back of a spoon to break up meat, until browned, about 5 minutes. Remove from pan, and let drain on paper towels.

Add oil and collard greens in the same skillet; cook over medium-high heat until tender and moisture has evaporated, 10 to 15 minutes.

Stir together sausage, collards, eggs, cream, milk, salt, pepper, and 2 cups Cheddar in a large bowl until well combined. Gently stir in waffle pieces. Spoon into prepared pan. Cover and refrigerate overnight.

Preheat oven to 350°.

Bake, uncovered, until browned, bubbling, and set in center, about 45 minutes. Sprinkle with remaining ½ cup Cheddar. Bake until cheese is melted, about 5 minutes more. Serve with maple syrup.
