Maple Sausage & Waffles Overnight Casserole
Get your prep work out of the way the night before and have breakfast ready to pop in the oven first thing in the morning with this Maple Sausage & Waffles Overnight Casserole.

Spray a 9x13-inch baking dish with cooking spray.
Cook sausage over medium-high heat, in a large skillet. Using the back of a spoon to break up meat, until browned, about 5 minutes. Remove from pan, and let drain on paper towels.
Add oil and collard greens in the same skillet; cook over medium-high heat until tender and moisture has evaporated, 10 to 15 minutes.
Stir together sausage, collards, eggs, cream, milk, salt, pepper, and 2 cups Cheddar in a large bowl until well combined. Gently stir in waffle pieces. Spoon into prepared pan. Cover and refrigerate overnight.
Preheat oven to 350°.
Bake, uncovered, until browned, bubbling, and set in center, about 45 minutes. Sprinkle with remaining ½ cup Cheddar. Bake until cheese is melted, about 5 minutes more. Serve with maple syrup.
