FOR THE CREAM CHEESE FROSTING:
Good to Know
Depending on how many you’re cooking for, these recipes easily halve or double. If you’re cooking for a crowd, place cooked waffles in a 200° preheated oven to keep warm.
Instructions
Heat butter and cocoa in a saucepan over low heat until butter melts; cool slightly.
Whisk together flour, sugar, baking powder, espresso powder, and salt.
Whisk buttermilk, eggs, food coloring, vanilla, and vinegar into butter mixture until combined; gently stir into flour mixture with a fork until most (but not all) of flour mixture moistened. Fold in chocolate.
Preheat waffle iron according to manufacturer’s instructions, then coat with nonstick spray.
Add enough batter to center of iron to fill, about 1 cup, and cook until crisp and golden, 3–4 minutes; repeat with remaining batter. Serve waffles with Cream Cheese Frosting.
For the Cream Cheese Frosting
Beat cream cheese, butter, milk, vanilla, and salt with a mixer on medium speed until light and fluffy, 3–5 minutes.
Slowly beat in powdered sugar until light and fluffy.
