Torijas are basically the Spanish version of French toast, different enough in flavor and preparation to be something excitingly new — especially with the addition of honey-orange syrup.

FOR THE HONEY-ORANGE SYRUP:

Heat milk, half-and-half, sugar, cinnamon stick, orange peel, and salt in a saucepan over medium to a boil. Off heat, stir in sherry and vanilla; cool mixture slightly. Discard cinnamon stick and orange peel.

Arrange baguette slices on a baking sheet (rimmed) in a single layer; pour milk mixture over top and let soak 5 minutes. Flip baguette slices; soak until nearly all liquid is absorbed but slices aren’t falling apart, about 5 minutes more.

Whisk together eggs and egg yolks until combined.

Heat ¼ cup oil in a skillet over medium until shimmering.

Dip six baguette slices, one at a time, on both sides into egg mixture until coated, letting excess drip off; transfer slices to skillet in a single layer. Cook baguette slices until golden brown on bottoms, 34 minutes per side; transfer to a baking sheet lined with a wire rack. Heat remaining ¼ cup oil in skillet; repeat dipping and cooking remaining six baguette slices.

Serve Torijas with Honey-Orange Syrup.

For the Honey-Orange Syrup

Heat sugar, honey, ¼ cup orange juice, water, and salt in a saucepan over medium-low until reduced slightly and thickened, 10 minutes.

Off heat, stir in remaining ¼ cup orange juice; cool slightly.
