Apple & Cranberry Cobbler
This Apple & Cranberry Cobbler takes full advantage of fall's bounty of fruit. Tart cranberries and sweet apples form the layer of juicy fruit, but it’s the topping that seals the deal — sweet, buttery, crispy, and nothing short of satisfying.

Before baking, set the skillet on a baking sheet lined with parchment paper in case filling bubbles over.
Instructions
Preheat oven to 400°.
For the filling, whisk together apple juice, cornstarch, lemon juice, and ginger in an 8-inch cast-iron skillet until cornstarch dissolves.
Add apples, cranberries, granulated sugar, brown sugar, and cinnamon; stir to coat. Bring mixture to a boil over medium-high heat.
Reduce heat to medium and simmer until mixture thickens, 2–3 minutes. Off heat, stir in vanilla.
For the topping, stir together flour, granulated sugar, baking powder, and salt in a bowl. Cut in butter using a pastry blender until mixture resembles coarse meal. Add walnuts, zest, and water; stir just until moistened. Drop dough evenly over fruit mixture.
Bake cobbler until filling is bubbly and topping is browned, about 25 minutes. Let cobbler cool on a rack 1 hour before serving.
