Rather than top your dessert with traditional crescent-shaped apple slices, add a twist by including the core. Depending on whether you cut the apple standing up or on its side, you’ll get an oval or a star shape, respectively. To make the process easier, use a mandoline for clean, consistent cuts.

Instructions

Preheat oven to 325°. Spray a 12-inch cast-iron skillet with baking spray with flour.

Pat shredded apple dry with paper towels.

Whisk together flour, granulated sugar, cinnamon, ginger, and nutmeg in a large bowl. Make a well in center of flour mixture; add milk, oil, eggs, and 1 teaspoon vanilla, and beat with a mixer at low speed until moistened. Fold in shredded apple. Spread batter into prepared pan. Top with sliced apples, overlapping slightly.

Bake until a wooden pick inserted in center comes out clean, about 40 minutes. Let cool completely on a wire rack.

Whisk together confectioners’ sugar, lemon juice, and remaining ¼ teaspoon vanilla in a large bowl. Drizzle onto cooled cake.
