Chocolate-Mint Sandwich Cookies
When the air turns colder and the holiday decorations go up, it’s time to break out the cookie recipes and start baking. These Chocolate-Mint Sandwich Cookies are inspired by Milano sandwich cookies — crisp around the edges, but a little softer in the center with a creamy mint filling.

Preheat oven to 350°. Line baking sheets with parchment paper and fit a pastry bag with a medium, straight tip.
For the cookies, whisk together flour, cocoa, and salt.
Cream butter, powdered sugar, and granulated sugar in a bowl with a mixer on medium speed until light and fluffy.
Add egg whites a little at a time, beating to fully incorporate; mix in flour-cocoa mixture. Transfer batter to prepared piping bag.
Pipe batter onto prepared baking sheets in strips ¾-inch wide and 2-inches long. Bake cookies until crisp around the edges, 18–20 minutes; let cool on pan.
For the filling, microwave cream and mint extract in a bowl until boiling; pour over chocolate in a bowl. Let mixture stand 5 minutes, then stir until smooth. Add food color a drop at a time until desired color is reached; stir to blend.
Spread filling onto half of the cookies and top with remaining cookies to form sandwiches.

To fully incorporate egg whites, add in six additions, scraping down sides of bowl after each addition.

Because they spread, pipe the cookies at least two inches apart on the baking sheets.
