Honey-Ginger-Lemon Cookies with honey glaze
Honey-Ginger-Lemon cookies are proof of honey’s affinity with ginger and lemon in each soft, sweet bite.

These soft and chewy cookies don’t NEED the glaze, but it’s a sweet addition. And if you want to bump up the lemon flavor, use lemon juice instead of milk.
Instructions
Preheat oven to 350°. Line two baking sheets with parchment.
Whisk together flour, zest, ground ginger, baking powder, baking soda, and salt.
Beat butter and granulated sugar with a mixer on medium speed until light and fluffy, 3–5 minutes.
Add candied ginger; beat to combine, then beat in ½ cup honey, egg, and 1 Tbsp. lemon juice until combined. Add flour mixture; beat on medium-low speed just until combined. Cover and chill dough for 1 hour or overnight.
Scoop dough with a #40 scoop (1½ Tbsp.) onto prepared baking sheets spaced 2 inches apart.
Bake cookies until lightly browned, about 12 minutes, rotating pans halfway through. Let cookies sit on baking sheets 2 minutes, then transfer to a rack to cool completely.
Whisk together powdered sugar, remaining ¼ cup honey, and milk until smooth; immediately drizzle over cooled cookies. Let cookies stand until glaze lightly sets, about 1 hour.
