Joyful Coconut-Almond Macaroons
Macaroons are at the top of our coconut list. Sweet and chewy, these little morsels, with an almond chocolate “kiss” in the center, are sure to bring joy to your life.

Granulated vs Coconut Sugar
If you opt to use coconut sugar in your recipe, your macaroons will be darker in color, and they might be a tad less gooey in texture.
Instructions
Preheat oven to 325° with rack in bottom third. Line baking sheets with parchment.
Combine coconut, egg whites, sugar, almond extract, and salt in a bowl until combined and coconut evenly moistened.
Scoop batter using a #60 scoop (2 tsp.), inserting a candy, point side down, until enclosed on all sides except the bottom, then turn macaroons out on prepared baking sheets, spaced about 1 inch apart.
Bake macaroons, one baking sheet at a time, until golden brown, about 20 minutes, rotating halfway through. Let macaroons cool 5 minutes on baking sheets before transferring to a rack to cool completely.
Meanwhile, heat chopped chocolate and cream in a bowl set over a pan of simmering water, stirring until smooth. Drizzle ganache over macaroons; let set before serving. Store macaroons in an airtight container.
