Mulling Spice Jam Bars

Preheat oven to 350°. Spray a 9-inch square baking pan with cooking spray. Line with parchment paper, letting excess extend over sides of pan.

Reserve ¼ cup sliced almonds; finely chop remaining ¾ cup almonds.

Mix together chopped almonds, flour, and baking powder in a medium bowl.

Whisk together butter, brown sugar, 5¼ teaspoons pumpkin pie spice, salt, and vanilla in a large bowl. Add flour mixture to butter mixture, stirring just until combined. Press 2 cups dough into bottom of prepared pan. Crumble remaining dough; add reserved ¼ cup sliced almonds. Set aside.

Whisk together jam, zest, and remaining 2¼ teaspoons pumpkin pie spice in a medium bowl. Spoon jam mixture over dough in pan, and spread to within a ½-inch from edge; top with crumble mixture.

Bake until crumble is lightly browned and jam is bubbly, 35 to 40 minutes. Let cool completely in pan. Using excess parchment as handles, remove from pan, and cut into 9 bars. Top with confectioners’ sugar, if desired.
