Oatmeal Cake with Brown Butter Icing
Topped with sweet icing, this hearty oatmeal-raisin cake has a homey, old-fashioned feel that’ll have the family requesting it time and again.

Preheat oven to 350°. Coat a 9×13-inch baking dish with nonstick spray.
For the cake, heat 1½ sticks butter and water in a saucepan until they boil. Pour boiling liquid over oats and let sit 5 minutes. Stir in granulated sugar, brown sugar, eggs, and 1 tsp. vanilla.
Whisk together flour, baking soda, 1 tsp. salt, 1 tsp. cinnamon, and raisins; stir flour mixture into oat mixture and pour into prepared dish. Bake cake until a toothpick inserted in the center comes out clean, 30–35 minutes.
For the icing, melt 4 Tbsp. butter in a small skillet over medium heat. Cook butter until brown flecks appear in the bottom of the skillet, 10–12 minutes. Pour browned butter into a bowl.
Beat powdered sugar, 1 tsp. cinnamon, and pinch of salt into butter with a mixer. Beat in milk and 1 tsp. vanilla until smooth. Spread icing on warm cake and top with pecans.

Browning butter is easy, but watch it carefully so it doesn’t scorch. If that happens, you must start over.
