Pear & Chocolate Bread Pudding
If you've got an occasion to celebrate — or if you just need a little indulgence! — this Pear & Chocolate Bread Pudding is the perfect blend of special and sweet. Pears and chocolate may seem like unexpected partners, but this luscious warm pudding with its insane chocolate sauce will have you changing your tune.

Instructions
Preheat oven to 300°. Coat a 9×13-inch baking dish with nonstick spray.
Stale bread on a baking sheet in oven until dried out, 30 minutes.
Blend eggs, half-and-half, brown sugar, 1 Tbsp. vanilla bean paste, and cinnamon in a bowl using an immersion blender or hand mixer. Add staled bread and toss to coat; let sit 30–45 minutes. Increase oven temperature to 350°.
Layer half the bread mixture in prepared dish; top with 4 oz. chocolate and half the pears.
Repeat layering with remaining bread mixture, 4 oz. chocolate, and pears; top with 4 Tbsp. butter. Bake bread pudding until center is set, about 1 hour; transfer pudding to a rack and let sit 20–30 minutes.
Simmer ¾ cup cream over medium-low heat. Pour hot cream over remaining 6 oz. chocolate and remaining 1½ Tbsp. butter; let sit 5 minutes, then whisk in remaining 1 tsp. vanilla bean paste until smooth.
Serve bread pudding with sauce and whipped cream.
