Strawberry, Oat, and Pecan Cookies

With a soft center and plenty of oats, nuts and fresh fruit, these Strawberry, Oat, and Pecan Cookies are a not-so-guilty pleasure.

Preheat oven to 400°. Spray a 14-inch cast-iron baking pan with baking spray with flour.

Place butter, granulated sugar, and vanilla in a large bowl. Beat with a mixer at medium speed until fluffy, 3 to 4 minutes, stopping to scrape sides of bowl. Beat in egg.

Whisk together flour, baking powder, and salt in a medium bowl. Gradually add flour mixture to butter mixture, beating at low speed until combined. Beat in oats and pecans.

Pat strawberries dry with a paper towel; add to dough. Beat at low speed just until combined. (Do not overbeat.)

Scoop dough with a 1½-inch springloaded scoop, and place 1 inch apart on prepared pan.

Bake until lightly browned, about 12 minutes. Let cool on pan for 8 minutes. Using a spatula, transfer cookies to wire racks, and let cool completely. Dust with confectioners’ sugar before serving.
