Sweet Corn Ice Cream
Sweet Corn Ice Cream may not have been something you'd considered, but the natural sweetness of fresh corn pairs perfectly with cream and other dairy products producing an ice cream that's unbelievably sweet, creamy, and full of corn flavor.
Ingredients
Give the Bodacious, Seneca Sensation, and Precious Gem varieties of sweet corn a try for this ice cream base. But don't worry if you can't find them. The most important thing, to yield the best flavor and texture, is to choose the freshest ears of corn you can find.
Instructions
Heat corn kernels, cobs, milk, cream, and sugar in a saucepan over low, stirring until sugar dissolves. Simmer mixture 1 hour; discard cobs.
Purée corn mixture, in batches, in a blender until smooth.
Lightly beat yolks in a bowl. Slowly whisk in hot corn mixture; return mixture to saucepan. Cook custard over low heat, stirring constantly, until it thickens and reaches 170° (do not let boil).
Immediately strain custard through a fine-mesh sieve into a bowl and chill at least 6 hours.
Transfer custard to an ice cream maker and churn according to manufacturer's directions. Freeze ice cream in an airtight container until firm, at least 3 hours.
