Sweet Potato and Marshmallow Blondies

Preheat oven to 350°. Spray a 13x9-inch baking pan with baking spray.
Beat butter and sugar in the bowl of a stand mixer fitted with a paddle attachment on medium speed until fluffy, 3 to 4 minutes. Add sweet potato, egg, and vanilla, beating until well combined.
Whisk together flour, baking powder, and salt in a large bowl.
Add flour mixture to butter mixture, mixing on low speed until just combined. Fold in ½ cup of mini marshmallows, ½ cup chocolate chips, and ½ cup pecans. Spread batter into prepared pan, using a spatula to smooth top.
Bake until a wooden pick inserted into center comes out with moist crumbs, about 35 minutes. Sprinkle with remaining ½ cup mini marshmallows, remaining ¼ cup chocolate chips, and remaining ¼ cup pecans. Bake until marshmallows start to melt, about 3 minutes more. Let cool for 30 minutes before slicing.
