The Blood and Sand cocktail is an unusual classic that incorporates Scotch whisky with sweet vermouth. Originally made with blood orange juice — hence the name — this version uses ordinary orange juice for year-round enjoyment.

HOW TO FLAME AN ORANGE PEEL
Cut a quarter-sized piece of peel from an orange,
avoiding the pith.
Hold the peel, rind side out, over the cocktail,
then bring the flame of the lighter up to the rind.
Squeeze the peel, and the oils should ignite in
the flame; run the peel along the rim of the glass,
then drop it into the cocktail.
Instructions
Add Scotch, orange juice,
vermouth, and Cherry Heering
to a cocktail shaker with ice; shake
vigorously until very well chilled,
then strain into a cocktail glass
and garnish with an orange peel.
