a slice of cucumber. As an upgrade, we’re relying on
fresh cucumber and lemon juices for the ultimate

If you don’t have a juicer, purée the
cucumbers in a food processor, then strain
the purée through a fine-mesh sieve,
pressing to get as much juice as possible,
then discard the solids.
Use a Y-peeler to slice thin cucumber strips — garnish glasses after adding the ice.
Instructions
Whisk sugar into cucumber juice in a pitcher
until dissolved.
Stir in Pimm's, gin, and lemon juice to combine;
chill until ready to serve. Divide cocktail among
four ice-filled glasses; top each with 2 oz. club
soda, a mint sprig, and cucumber, lemon, and
strawberry slices.
