Ingredients

Non-Alcoholic Pear Mimosas

To make nonalcoholic, substitute 2 (750-ml) bottles sparkling cider.

Instructions

Bring pear nectar and thyme to a boil in a medium saucepan over medium-high heat. Reduce heat to medium, and simmer for 10 minutes, stirring occasionally. Remove from heat, and stir in lemon juice. Let cool completely. Cover and refrigerate for 48 to 72 hours. Strain mixture through a fine-mesh sieve, discarding thyme.

Divide sparkling wine evenly into 8 Champagne flutes. Top with infused pear nectar. Garnish with a thyme sprig, if desired.
