Instructions
Place apples, brown sugar, orange juice, allspice,
ginger, vanilla bean, and cloves in a pot; add
water and heat to a boil over medium-high.
Reduce heat to low; simmer cider, covered, 1 hour.
Mash apples with a potato masher until crushed;
simmer, uncovered, 1 hour more.
Strain cider through a fine-mesh sieve, or
cheesecloth, into a pitcher or pot. Stir whisky
into cider and serve warm.
