For the coleslaw, whisk together oil, vinegar, mustard, and honey for the vinaigrette.
Toss together coleslaw mix, chives, and vinaigrette.
For the sandwich, whisk together barbecue sauce, vinegar, and mustard; reserve ½ cup sauce. Transfer remaining sauce to a sauté pan and heat over medium. Stir in chicken and cook to heat through, 5 minutes; season with salt and pepper.
Serve pulled chicken on buns topped with sauce and coleslaw.
