Beef Tenderloin Steaks with Red Wine-Mushroom Sauce

If possible, buy evenly shaped steaks. Or cut steaks from one 20-oz. piece of tenderloin.

Instructions

Preheat oven to 450°. Line a baking sheet with parchment paper.

For the beans, toss beans with butter and Dijon; season with salt and pepper. Arrange beans on prepared baking sheet, cover with foil, and roast 10 minutes. Remove foil, stir beans, and roast until forktender, about 10 minutes more. Toss beans with thyme.

For the steaks, sauté steaks in oil in a sauté pan over medium–high heat until browned, 5 minutes; flip, reduce heat to medium, and cook steaks to desired doneness, 58 minutes more for medium-rare. Transfer steaks to a plate, loosely tent with foil, and let rest while making sauce.

For the sauce, melt butter in same pan over medium heat.

Add mushrooms and shallots; cook until mushrooms are softened, about 5 minutes.

Deglaze pan with wine and broth, scraping up any brown bits. Increase heat to high, bring sauce to a boil, then reduce heat to medium, and simmer sauce until reduced by one-third, 3 minutes.

Combine cornstarch with water and Worcestershire; stir into sauce and cook until it thickens, 12 minutes. Stir in thyme and any accumulated juices on the plate with steaks; season sauce with salt and pepper. Serve steaks with sauce.
