cheesy pasta, you’ll be hooked after
one bite of this delicious Bourbon-Bacon Mac and Cheese.

Instructions
Preheat oven to 375°.
Cook bacon in a 12-inch cast-iron
skillet over medium heat, stirring
occasionally, until crisp, about
10 minutes. Remove bacon using a
slotted spoon, and let drain on paper
towels, reserving drippings in skillet.
Add onion to skillet, and cook until
tender, about 5 minutes. Stir in flour,
thyme, salt, pepper, and nutmeg;
cook for 3 minutes. Gradually whisk
in milk and bourbon. Bring to a
simmer, and cook until slightly
thickened, about 3 minutes.
Gradually whisk in Gouda and 1 cup
Cheddar until smooth. Stir in half of
bacon and cooked pasta; sprinkle
with remaining bacon and
remaining ½ cup Cheddar.
Bake until golden brown and
bubbly, about 15 minutes.
Top with thyme, if desired.
