Never buy precooked
bratwurst. Ever. We’re all for convenience,
but these do nothing to enhance the
brat-eating experience.

Simmer the brats before
grilling. Precooking the sausages makes
them less likely to split on the grill,
which means the brats stay moist
because juices aren’t leaking out of the
casing. For the same reason, use tongs
or a spatula to turn them, never stab
them with a fork.
Instructions
Preheat grill to medium-high.
Cook bacon in a large skillet until crisp; transfer to a paper-towel-lined plate and pour off all but 1 Tbsp. drippings. Add onion and cabbage to skillet; cook until softened, 3–4minutes. Stir in bacon, mustard, and sugar; season with salt and simmer 5 minutes.
Simmer bratwurst in water in a large saucepan over medium-high heat until nearly cooked through, 10 minutes; drain.
Grill bratwurst, covered, until lightly charred and no longer pink in the center, about 10 minutes. Place buns, cut side down, on top of bratwurst to heat through; serve with kraut.
Precook the brats before grilling to prevent them from splitting and to shorten grilling time.
Once the brats are cooked, place the buns on top for a few minutes to warm through and toast slightly.
