Caesar Salad with Meatball Croutons
Caesar salad is popular for a reason — it’s quick, easy, and tasty. And we've all had that classic Caesar salad with grilled chicken. But when crisply browned mini meatballs, just bursting with flavor, are the croutons, this is sure to become your new go-to version. Whether you call them meatballs or croutons, they’re little bites of yum.

Instructions
For the croutons, combine sirloin, pork, panko, Parmesan, parsley, grated garlic, and salt in a bowl; stir in egg. Form sirloin mixture into nickel-sized meatballs.
Heat 2 Tbsp. oil in a skillet over medium-high. Add half the meatballs in a single layer and cook until browned on all sides and cooked through, 7–9 minutes; transfer to a paper-towel-lined plate. Repeat procedure with remaining 2 Tbsp. oil and meatballs.
For the dressing, mash garlic clove with salt on a cutting board using the side of a knife blade to make a paste.
Combine lemon juice, Dijon, Worcestershire, anchovy paste, and pepper in a bowl. Whisk in oil, Parmesan, and garlic paste.
Toss romaine and meatball croutons with dressing. Top servings with shredded Parmesan.
