Cheesy Onion Soup with Rye Croutons
Warm up your heart and soul with this ever-smooth soup that will leave you both satisfied and speechless. Instructions
Melt butter in a skillet over medium heat; add bread and cook until toasted, stirring often, 5 minutes. Season croutons with salt, pepper, thyme, and garlic powder.
Cook bacon in a pot until crisp; transfer to a paper-towel-lined plate and reserve drippings. Increase heat to medium-high.
Sauté onions in drippings until softened, 10 minutes. Sprinkle flour over onions and cook 2 minutes.
Whisk in broth and half-and-half in four additions, allowing soup to thicken after each addition. Bring soup to a simmer, whisking constantly.
Reduce heat to medium-low; gradually stir in cheese until melted, 3–5 minutes.
Off heat, stir in bacon and sage; season soup with salt and pepper. Top servings with croutons and chives.

For the best flavor and texture, cover the onions, and allow them to sauté in the bacon drippings.

To avoid curdling, gently incorporate the cheese by slowly adding it over a medium-low simmer.
