Instructions
Place tomatoes in a fine-mesh
sieve; place over a medium bowl.
Sprinkle tomatoes with ½ teaspoon
salt. Let drain for 30 minutes. Pat
tomatoes dry with a paper towel.
Discard liquid in bowl.
Preheat oven to 375°. Line 2 large
baking sheets with parchment
paper. Place 3 flatbreads on each
prepared pan.
Bake for 2 minutes. Let cool slightly.
Spread garlic and fine herbs
cheese onto flatbreads, leaving a
½-inch border. Divide tomatoes and
peaches evenly among flatbreads.
Sprinkle with Parmesan, pepper,
and remaining ½ teaspoon salt.
Bake until crust is browned around
the edges and cheese is melted,
7 to 8 minutes. Sprinkle with basil
and pine nuts before serving.
