Chicken & Mushroom Sheet Pan Pizza with Spinach & Artichoke Pesto

Of course you can use any toppings to your pizza, but pleasing everyone shouldn’t be a problem with options like a rich chicken and mushroom pie with lemony spinach and artichoke pesto. Want to make this pizza vegetarian? Just double up on the mushrooms and skip the chicken.

Pop the topped pizza into the oven directly onto a preheated baking stone. Since baking stones retain heat so well, it helps cook the pizza from the bottom to ensure the crust is cooked, and crisp, too.

It’ll definitely be hard not to dive into the pizza straight from the oven (because you’ll be able to smell the amazing aromas even before it’s done baking), but let the pizza rest in the pan 5 minutes before cutting into it. It’ll give the crust a chance to firm up and essentially finish cooking.

For the easiest cutting, transfer the pizza to a large cutting board, then pull out the pizza wheel and watch all the hungry mouths start to drool!

Prepare pizza dough according to directions.

Purée artichoke hearts, spinach, 3 Tbsp. oil, 4 tsp. garlic, pepper flakes, and zest in a food processor; season with salt.

Sauté chicken in 1 Tbsp. oil in a skillet over medium-high heat until cooked through, 5 minutes. Add 2 tsp. garlic in last minute of cooking; transfer to a plate.

Sauté mushrooms in same skillet in remaining 1 Tbsp. oil over high heat until mushrooms are golden, 5 minutes.

Add remaining 2 tsp. garlic in last minute of cooking mushrooms; transfer to a bowl.

Spread 1 cup pesto over dough, leaving a ½-inch border. Top pizza with 8 oz. Gruyère, chicken, mushrooms, remaining 4 oz. Gruyère, and Boursin.

Bake pizza according to directions, let rest 5 minutes, then sprinkle with parsley.
