Frozen egg noodles are heartier and fresher-tasting than dry noodles. Using them gives this dish an old-fashioned, homemade quality.
Instructions
Sweat mushrooms, carrot, celery, onion, and garlic in oil in a large pot over medium heat until slightly soft, 3 minutes.
Add broth, increase heat to medium-high, and bring to a simmer. Stir in noodles and cook until tender, 15–20minutes. Stir in chicken, tarragon, and chives; season with salt and pepper.
To create velvety texture, use frozen egg noodles — they're coated in flour and help to thicken the broth.
