Using an airy type of bread ensures the sandwich won’t be too bread heavy.
Instructions
Halve foccacia horizontally.
Brush cut sides of bread with reserved artichoke marinade.
Layer ¾ cup Cheddar on bottom half of bread (cut side up); top with chicken, artichokes, peppers, apple slices, remaining 3/4 cup Cheddar, and top half of focaccia (cut side down).
Place panini on grill pan; set a cast-iron skillet on top and grill 3 minutes. Remove skillet, turn panini 45-degrees to cross-hatch sandwich; replace skillet and grill panini until cheese starts to melt, about 3 minutes more. Carefully flip sandwich, repeat cross-hatch procedure on other side.
To help crisp the panini, weigh it down with a cast-iron skillet. Add a sheet of parchment between the bread and the skillet if the bottom of your skillet isn’t pristine.
