Chicken Chop Suey with Mushrooms
With a simple and delicious meal like this one, there’s no reason for a take-out menu. Grab the wok and start stir-frying! One of the quickest and easiest ways to cook is in a wok. It takes just a few minutes to assemble the ingredients and then a few more to stir-fry.
Stir-frying is stirring and frying at the same time. It’s a close cousin to sautéing — they both rely on a lot of heat to cook. In stir-frying, because the heat is so hot, it’s important to toss and turn the food to avoid burning. Americans have had a love affair with Chinese food for many years, and chop suey may be partially responsible. It’s thought that chop suey was created by Chinese Americans as a dish to satisfy their never-ending cravings for the food from home, and this one is sure to do just that.

To pull off a good stir-fry you’ve got to be prepared, so have everything chopped and ready to go before you begin cooking.
Instructions
Heat oil in a wok or large skillet over high until it shimmers. Add chicken and stir-fry until browned, 3–4 minutes.
Stir in mushrooms, onions, celery, and garlic; stir-fry until mushrooms are softened, 4 minutes. Stir in bean sprouts and water chestnuts.
Whisk together broth, soy sauce, and cornstarch; stir into chicken mixture and boil until thickened, 1–2 minutes.

To ensure the chicken gets brown, make sure the oil is hot before stir-frying the chicken.

Add the bean sprouts and water chestnuts at the end — they just need to heat through.

So the cornstarch doesn’t clump, dissolve it in the broth and soy sauce before adding to the skillet.
