Chicken, Grapefruit & Avocado Wrap

Make sure not to discard the bacon drippings. You’ll need 1 Tbsp. drippings for the dressing, and the rest is used to cook the chicken.
Instructions
Cook bacon in a sauté pan until crisp; transfer to a paper-towel-lined plate. Reserve 1 Tbsp. drippings for dressing; reserve remaining drippings in pan.
Combine flour, rosemary, ½ tsp. salt, and ½ tsp. black pepper; dredge chicken in flour mixture, shaking off excess.
Heat drippings in pan over medium-high. Sauté chicken until cooked through and browned on all sides, 5–6 minutes; transfer to plate with bacon.
Whisk together mayonnaise, zest, grapefruit juice, reserved 1 Tbsp. drippings, fronds, and pepper flakes for the dressing; season with salt and black pepper.
Toss chicken, spinach, grapefruit, and fennel with dressing.
Divide chicken mixture among tortillas; top with avocado. Roll tortillas tightly and secure with toothpicks.
